it’s a special celebration for singapore this year. to celebrate we are taking one of the most iconic local desserts, chendol and combining it with our favourite peak season black thorn durian. 


king of chendol is built on a base of our ruby urbano cold brew, which gives it structure and body. to that, we add a housemade mango & pandan infusion that we sous vide with lemon zest and fresh pandan leaves for two hours.


the chendol sphere is our favourite. our r&d team reverse-spherified a pandan base to create jelly-like pearls with a soft shell and liquid centre. they burst gently when you bite into them, releasing a pandan flavour in waves.

 

and then: durian cream. not just any durian, we use d200 black thorn blended with milk, gula melaka, vanilla bean, and french cream until it’s completely smooth, this layer adds richness and a massive durian aroma. this is half our team’s most beloved drink we have ever made, and half our team’s most disliked drink we have ever made.


we are really proud of this drink, as much as we are proud of singapore. 


it will be around for a couple of weeks from 28 july to 10 august!
